Giuseppe Quintarelli Valpolicella Classico Superiore 2018 Esthers Elyse has been stewarding thisAlmost nobody makes a Valpolicella like this: seven years in large Slavonian oak casks before release, longer than most estates age their Amarone. The Quintarelli family builds it from roughly 55% Corvina and Corvinone, 30% Rondinella and 15% of Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese, then re passes the young wine over the drained Amarone skins, the ripasso method, so the cellar's own yeasts start a second fermentation and the wine
